I got fresh beets last week and this week. I finally used them. I have never made fresh beets before but they are easy. Just boil them, let them cool and the skins come right off. I made a basic salad after they cooked.
Hmm...what could be under the plates??
Tofu (firm tofu). I am trying to eat less meat and so bought tofu to put into a Thai Curry. I read that before use that I should try and get the excess liquid out of it by placing something heavy on it. It came out nicely firm.

Not tried tofu yet. Need to do that. Looks great and a wonderful bounty of produce!
We had some Tom Yum soup (premade, sold in a bag, in a box) that's really just too lemony to eat as soup, so I came up with a good idea for it: I stir-fried some mushrooms and some snow peas, soaked some rice-stick noodles until soft, then mixed them together, poured the soup over them, heated until boiling, and then used a slotted spoon (well, in the US it would have been a slotted spoon - here I bought a dumpling server that's even better for the purpose) to pull out the noodles and veggies. Spicy and lemony but not overpowering.
I used it as a side dish with tuna steaks, but could have added chicken, shrimp, or tofu and/or more veggies to make a main dish.
I was boiling, or steaming fresh beets too all my life til I read that it's not the best way to cook them. Baking them is the best, and they were right. Peel them and wrap in tinfoil. Bake til done (? maybe 30 mins on 400 ?) All the natural flavours/sugars stay in and are not boiled away and they are incredibly better.
The csa share looks delicious and I like the idea of making more things with tofu, I'll have to try that too.
Nice CSA haul! Way to be adventurous in your cooking/eating....though you always are. :)
